This bold act was a game-changer for the tomato's reputation in America. Johnson’s tomato-eating stunt helped transform the fruit from a feared curiosity to a beloved staple in kitchens nationwide.
His bravery led to the widespread acceptance and popularity of the red veggie-tasting fruit, especially in New Jersey, where they became a major crop.
The famous Jersey tomato even captured 60% of the commercial market in the U.S. during the twentieth century. Thanks to Colonel Johnson’s gutsy move, we now enjoy tomatoes in everything from salads to spaghetti sauce without a second thought!
